Join us for an immersive evening celebrating the craftsmanship of John Sleeman Spirits, where expert mixology meets thoughtfully paired cuisine. Special Guest of honour Mr. Cooper Sleeman will be leading this VVIP experience!

The experience begins upstairs with Brix mixologist Will, who will guide guests through crafting a classic John Sleeman Whisky Sour while sharing the techniques, flavours, and stories behind this signature cocktail.

From there, guests will move downstairs to enjoy an elegant three-course whisky pairing dinner prepared by Chef Marcel Richard. Each course has been carefully designed to complement a curated selection of John Sleeman whiskies, featuring Traditional Straight Whisky, High Rye Straight Whisky, Rye Whisky, and The Cooper’s Rye Whisky. Throughout the evening, guests will discover how different whisky styles enhance and elevate each dish.

To finish the evening, Will will prepare a handcrafted Espresso Martini featuring John Sleeman Vodka and Ward Series Coffee Liqueur, perfectly paired with Chef Marcel’s house-made tiramisu.

Cooper Sleeman

Sitting on the banks of the Speed River in Guelph, Ontario, Spring Mill Distillery is draped in history and rooted in tradition. Since it’s conception over a decade ago, our mission has always been to deliver the highest quality Canadian spirits. Our conviction to offer premium spirits starts with the choicest Canadian grains and a selection of renowned equipment from the finest makers world-wide. Produced using time-honoured techniques true to traditional practices, each batch of spirit is carefully tended to from grain-to-glass.

Cooper began in the beverage alcohol industry at 19, working on the bottling line for Sleeman Breweries. After completing his undergraduate degree at Queens University, Cooper started in Sales with Sleeman, working in a variety of different territories including; Toronto Core Retail, Sudbury/North Dual, and Kingston Dual. In these positions, Cooper worked closely with Product Consultants, and Managers at many LCBO locations.

Cooper started working at Spring Mill Distillery in May of 2018, where he worked with Doan Bellman, the Master Distiller and VP of Operations, to help assemble the equipment. This is where he learned most of his distilling knowledge, which assists him in his current position, Director of Sales and Marketing.

He also opened the Ward Bar. A Liquor Licensed establishment at the distillery that offers a wide selection of wine, beer, hand made cocktails, charcuterie boards.

Working for the family business has always been a passion for Cooper, he hopes to continue to grow Spring Mill Distillery into one of Canada’s leading spirit producers.
